“Premium”, “artisan” and “locally sourced” are easy words to put on a website. We would rather tell you what we actually chose and why.
We can talk confidently about the ingredients we use because the selection is part of the cooking. The bread has a job. The bacon has a job. The cheese has a job. The produce has to suit the dish. Taste, consistency, value, provenance and purpose all matter.
